For the dough (makes enough for approx 10 mini pizzas) :
2 1/2 cups of plain flour
2 3/4 tsp. baking powder
pinch of salt
1 tbsp. oil
3/4 to 1 cup of water
Mix up the dry ingredients, then add 3/4 cup water and oil. Stir until it forms a ball. If dough is stiff, add a little more water. The dough should be soft, not sticky. Roll and use a cookie cutter to make your bases. They will expand in the oven so choose a cutter slightly smaller than the desired size of the pizza.
1/2 can chopped tomatoes
1 small clove of garlic
1 tsp oregano
1 tsp sugar (takes the acidity out of the tomatoes).

Mix together well squashing larger pieces of tomato with a fork. Cut up small pieces of veg (or whatever else you fancy) for the topping. We went for green pepper, sweet corn, mushroom and sliced cherry tomato. Now comes the fun part.. Spread your sauce over the bases and get your little helper to sprinkle on their favourite topping. Cover with a good helping of cheese and pop in the oven, 200C for approx 15 minutes. Job done!
